Grass Fed Muffin Pan Meatloaf (Gluten Free) with Shakshuka
Ingredients

2 pounds grass fed ground beef

½ cup chopped onion

1 cup gluten free crumbs

2 eggs
-
2 teaspoon salt
-
1 teaspoon ground black pepper

1 teaspoon garlic granules
-
1 teaspoon crushed red pepper

1 jar of Mina Shakshuka Sauce*
*“Shakshuka” broadly translates to “all mixed up,” and that’s a fitting description for this flavorful stewed blend of ripe tomatoes, roasted peppers, onion, garlic, extra virgin olive oil, cilantro, parsley, and secret blend of six Moroccan spices.
Directions
Step 1
Preheat oven to 350 degrees
Step 2
Lightly grease or spray a regular sized 12-cup muffin pan
Step 3
In a large mixing bowl, blend together the grass fed ground beef, onion, gluten free bread crumbs, eggs, salt, pepper, garlic granules, and crushed red pepper.
Step 4
Spoon mixture evenly into prepared muffin cups.
Step 5
Bake for 35 minutes
Step 6
Remove from the oven and spoon the Shashuka sauce on top of the meatloaf, covering the tops
Step 7
Place the pan in the oven and bake for an additional 15 minutes
