- 1 large stalk celery, diced
- 1 large carrot, diced
- 4 garlic cloves, roughly chopped
- 1 2-inch knob of ginger, finely diced
- 1 cup spinach or kale
- 1 15 oz. can unsweetened coconut milk

- 1 cup water
- 1 tsp. salt

- 1 tsp. turmeric
- ¼ tsp. crushed red pepper flakes

Directions
Step 1
Heat oil in a Dutch oven or pot over
medium-low heat. Add leek, celery and carrots and saute for about 5 min., stirring occasionally.
