Sous vide, also known as low-temperature, long-time cooking, is a method of cooking in which food is placed in a plastic pouch or a glass jar and cooked in a water bath for extended cooking times at a regulated temperature.

Directions

Step 1

Generously season steaks with salt and pepper. Place into a large plastic bag and vacuum seal.

Step 2

Fill a large pot with water. Attach a sous vide cooker  to the pot and set the temperature to 130 degrees F. 

 

Step 3

Immerse the bagged and sealed steaks into the water bath and cook for 2 1/2 hours.

Step 4

Remove the bag from the water bath and take out the steaks. 

Step 5

Pat the steaks dry (remember: Moisture is the foil to any Maillard reaction!)

Step 6

Preheat two tablespoons of oil or butter in a heavy high sided skillet to medium-high

Step 7

Place steak in a heated pan and sear on each side for 1 minute.

Cooking Tips

*From the Reddit thread “How the heck do I know if my pan is hot enough”, one Reddit user suggested the “hand method”. This tip suggests you put your hand about 3 inches above the pan and asses “high, medium, or low” based on how long it takes for you to remove your hand from the heat:

High: 1 – 2 seconds

Medium-High: 2-4 seconds

Medium: 4-5 seconds

Medium Low: 6-7 seconds 

Serving Suggestions

  • Serve with potatoes of any kind, mashed, french fried, or roasted. Steak and potatoes is one of the most classically delicious combos!
  • Fresh speciality mushrooms like chanterelles take this already gourmet meal to the next level. Slice and pan sear and finish with sea salt. Serve the mushrooms on top of your steak with a drizzle of high quality balsamic vinegar.
