Slow Cooked Grass-Fed Flank Steak Tacos

Ingredients

  • 1 ½ – 2 lbs Grass fed flank steak

  • 3 tablespoons of high-heat vegetable oil such as avocado oil

  • 1 container Pre-Chopped (or diced) white onions from New Morning Marke’s Produce department

  • 1 package of Siete Chorizo seasoning

  • 4 cups of vegetable broth

  • Corn tortillas

  • Pre-sliced red onions from New Morning Market’s Produce department

  • Fresh lime juice

  • Cotijia cheese

  • Fresh cilantro

  • Siete Chamoy Botano Sauce

  • Siete Jalapeno Botana Sauce

Directions

Step 1

Heat vegetable oil in a Dutch oven over medium heat

Step 2

Season the grass fed flank steak with Siete Chorizo seasoning

 

Step 3

Place the flank steak in the heated Dutch oven and sear each side until browned. About 3 minutes per side.

Step 4

Add the diced white onions to the pot and saute for about 2 minutes, stirring occasionally, until the onions are fragrant and slightly translucent

Step 5

Add the vegetable broth to the Dutch oven and bring to a boil

Step 6

Reduce to a simmer and cover.

Step 7

Keep covered and simmer for 2 ½ to 3 hours or until the flank stank is “fork tender” (see cooking tips below).

Step 8

Remove the steak from the Dutch oven and slice or pull apart with a fork

Step 9

Serve on corn tortilla and top with cotija cheese, cilantro, red onions and fresh squeezed lime juice

Drizzle assembled tacos with Siete Chamoy Bontana sauce and Siete Jalapeno Bontana Sauce

Cooking Tips

The pros in our meat department suggest slow cooking grass fed roasts until they are “fork tender”, and using directed cooking times as a suggestion. Fork tender means that you can cut into the roast with the prongs of the fork, or, easy enough to cut with a fork, signifying that the roast is tender and ready to serve

This recipe also works in a slow cooker. Follow steps 1 – 4, then transfer the steak and onions to a slow cooker and cook on high for 8 hours.

The smoky chorizo seasoning mixed with the sweet chamoy and mildly spicy jalapeno sauce creates a fireworks show of flavors! However, you can mix and match your favorite seasonings and sauces that cater to your special tastes. Grilled pineapple and roasted poblano pepper, toasted sweet corn and diced tomatoes, or fresh greens and sliced mangos are all delicious substitutes.
