Two Delicious Gazpacho Recipes

These two gazpacho recipes are ideal for beating the late summer heat and making use of the nutrient-rich garden vegetables that are plentiful this time of year. Plus, as an added bonus, this classic summertime soup doesn’t require any cooking.

Organic Local Harvest Gazpacho

Ingredients

  • 1 seeded and Peeled Organic Cucumber

  • 2 Organic Red Bell Pepper – Chopped

  • 1 Can Whole Plum Tomato (Or 4 Organic Fresh Plum Tomato)

  • 1 Red Onion Chopped

  • 3 Garlic Cloves

  • 3 Cups – Organic Tomato Juice

  • ¼ Cup Sherry Vinegar

  • ¼ Cup Barbera Lorenzo Sicilian Extra Virgin Olive Oil or other fine quality extra virgin olive oil

  • Cilantro (Optional)

Steps

Chop all ingredients into medium-sized pieces. Place them into a blender or food processor, working in batches if necessary. Blend until the soup is fully pureed. Serve each portion topped with Satlverk finishing salt or another large crystal salt.

Green Goddess Gazpacho

Nutrient rich, delicious organic green fruits and veggies including green grapes, cucumbers, avocados, cilantro, and mint are blended with olive oil, vinegar, and seasonings to make this fresh twist on classic gazpacho. The toasted almond and chopped herb garnish add vibrancy to every bite!

 

Green Goddess Gazpacho

Ingredients

  • 2 Organic Cucumbers – Seeded, Peeled and Chopped

  • 1.5 Lbs. Green Grapes (1/2 Lb Reserved For Garnish)

  • 1 Ripe Avocado

  • 1 Shallot – Chopped

  • 2 Cloves Garlic

  • ½ Cup Barbera Lorenzo Sicilian Extra Virgin Olive Oil or other fine quality extra virgin olive oil

  • ¼ Cup White Wine Vinegar

  • Salt to Taste

  • Fresh Mint and Cilantro for Garnish

Steps

In a blender, combine all ingredients except the almonds and herb garnish. Blend until smooth, working in batches if needed. Serve cold, garnished with reserved chopped grapes, toasted almonds, and chopped herbs. Finish each serving with Satlverk finishing salt or another large crystal salt.
